About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Santos' Curried Potato Fritters : page 67

This recipe is from Santos Loo. He uses cottage cheese which he says is a perfect stand in for paneer, (a good tip to know) a fresh Indian cheese which is traditionally used in these fritters. I really like this idea since I can easily find cottage cheese but have never seen Paneer in our local groceries. He says to serve it with mango or tomato chutney. Our daughter made some tomato chutney from a recipe she found online and it was delicious with these fritters as were the fritters.

Tomato Salad with Cheese Crisps : page 102

This was a delicious salad and very pretty to the eye as well. We loved the dressing and think it would be good on other salads as well.
