Sara's Secrets for Weeknight Meals
By Sara Moulton

This is just delicious and a bit better for you than nachos. Great for a weeknight meal.

We love goat cheese and are always on the lookout for interesting ways of using it. These are wonderful and easy to make. Sara says if you're not a fan of goat cheese any good melting cheese will work, such as mozzarella, Swiss or even cheddar.

I decided to make these with the optional choice of limes instead of lemons. I made a half-recipe and got 2 dozen cookies. Next time I’ll be making a whole recipe since these were delicious. The only thing I’d do differently is to roll the cookies in the confectioners’ sugar instead of dropping them into a resealable plastic bag. These cookies are delicate and some of them fell apart after tossing them into the bag. I love the tartness of the lime juice and zest along with the sweetness of the sugar. These are small cookies but pack a delightfully large punch. YUM!

I love chocolate and adore chocolate desserts but my son doesn't care for chocolate. I was looking for something to make for him and decided on this cake. He loved it as did his Dad. It's amazing. I took some to work to share with my two lunch mates and they sure enjoyed it too. It's one I'll make again for sure.

We loved these. The first time I made them I made half without the Swiss. Even though they are great with the cheese I liked them even better without. This is a fast easy meal for a work night. All you need to add is some cranberry sauce and a veggie and you're all set.

Everyday Pasta
By Giada De Laurentiis
Clarkson Potter - 2007
A good cheesy mac and cheese with Fontina, Parmesan, and Mozzarella. The addition of the optional ham in my opinion bumps this up from a side dish to a main dish. We love trying new mac and cheeses and this one was great.

The Comfort Table: Recipes for Everyday Occasions
By Katie Lee
Simon Spotlight Entertainment - 2009
This is a wonderful fall salad full of fall flavors. The dressing would be good on a variety of salads. I couldn't find just baby arugula so I used mixed baby greens that contained arugula. I love Pomegranate molasses but we are unable to find it here and I was out of what I brought back from California with me so I used the suggested option of honey and used honey from our own bees.

We love greens and my family usually has a fall patch of greens growing in the garden. I'm always on the lookout for new ways to fix those greens. This is a delicious recipe. I used Kale, mustard and turnip greens. The addition of onions, red pepper flakes, and lemon juice gave a wake up call to those tasty greens.

These shells are so good it's hard to believe they're actually healthy. I often use cottage cheese instead of ricotta when making these since we like that better.

This macaroni and cheese is over the top. It's delicious but a little costly to make. It's great for a special occasion though and I made this for my daughter's birthday in 2009. Cheeses included are mild and sharp cheddar, Velveeta, mozzarella, and provolone. What sends it over the top is the lobster and shrimp.

By Nigella Lawson

I've made these several times and we love these. I've even made them with raisins instead of cranberries and they're good both ways. To make them a bit healthier I've even used fat free sweetened condensed milk. They make a great breakfast on the go or a wonderful healthy snack.
