A lovely and simple way of cooking asparagus, which is a nice change from boiling. It gives the asparagus a chewy tecture.

indian spiced aubergine : page 34

this was a great easy recipe that i cooked for a friend with extreme dietry needs who loved it. If you ever have an aubergine sitting about i would highly recommend this. the book calls for fresh tomatoes but ive used tinned before to great success. It also works with additions such as peppers or courgettes to make a spicy style ratatoulli.
