Bangkok Peanut Ice Cream : page 166

This had a unique flavour but I liked it quite a bit. My husband wasn't a huge fan, so there was more for me. The flavour remained interesting til the end of the batch due to the blend of peanut butter, coconut milk honey, coconut, and cayenne. I would definitely try it with the optional ginger coins next time.

Brown Butter Almond Brittle Ice Cream : page 168

I loved this but my husband didn't. I like the (much faker tasting) buttered popcorn Jelly Bellys though, so I was a good candidate for this recipe! I always reduce the cream cheese from 1.5oz to 1oz in Jeni's recipes, and did that here as well. I'd love to try this with the Honey Hickory Praline variation next!

Maple Ice Cream With Salty Buttered Nuts : page 114

As written, this was tooth-achingly sweet - I had to double check to make sure I hadn't accidentally doubled the maple syrup. However, I loved the true maple flavour combined with the salted nuts. I plan to try this one again with reduced maple syrup (by as much as 1/4 or 1/3).

Roasted Pistachio Ice Cream : page 40

I've made a few of Jeni's recipes now and really like them for the consistency and flavour. However, the flavour on this one just wasn't doing it for me. I think the almond extract that's added at the end overwhelmed the subtle pistachio flavour too much.
I followed the recipe exactly except for reducing the cream cheese from 3oz to 2oz (I do this every time with Jeni's recipes or many have a hint of cheesecake, which I'm not fond of). I did add the optional whole pistachios.

Ugandan Vanilla Bean Ice Cream : page 148

My new standard vanilla recipe, although I now reduce the cream cheese from 1.5oz to 1oz or it verges on a cheesecake flavour (with the adaptation, I'd give it 5 stars). Plays nicely with various sauces, although it's so good it doesn't need a sauce at all.
