Texture was okay although a little "soft"; unfortunately there was very little flavour. I'm not a fan of spice so that's not what I was looking for; just...flavour. Next time I would double the seasoning and definitely add the optional salsa.

Lemon Cardamom Apple Cake : page 202
Flavour and texture were great. Unfortunately, the batter overflowed the prescribed 11x7" pan, and took almost 3x as long to bake as suggested. I would recommend using a 9x13" pan to help both problems. Also, the recipe recommends pouring the batter over the apples in the pan instead of folding them in. I found that the apples stayed in the bottom of the pan instead of coming out with the cake, so next time I will fold them in. I doubled the cardamom and didn't regret it; the flavour was still very subtle at 1/2 tsp for a larger pan.

Sweet Potato and Apple Soup : page 70
Recipes calls for two "medium" sweet potatoes. Considering the sweet potatoes in my area range from 0.5 to 3 pounds, that was a bit vague. The notes suggest you can substitute with 4 cups of chopped butternut squash, so I did 4 cups of chopped sweet potato. While chopping my three apples, I realized I would have more chopped apples than sweet potatoes, so I left out 1/4 of the apples to keep it from being too sweet and added in a little more sweet potato to replace it. In the end it was still a touch too sweet, and thinner consistency than the photo. However, the flavour was really good so next time I will do 1/2 the apples and replace the missing quantity with sweet potatoes. Also, I'll double the ginger for added warmth.
