Baked Sriracha Chicken Breast from Washington Post

So easy and quite delicious. I was careful with the Sriracha--didn't want it o be too peppery. As I was baking it in convection, I lowered the temp a bit. Result is very juicy and tender chicken. read more >

Green Pea and Ham Soup : page 57

I really love this soup--and I love the ham stock. I also love that there is enough ham stock left over to freeze and save for another batch of soup. I don't add the meat from the ham hock to the final soup--to me, that meat has already given its all to the stock and adds nothing but an unnecessary additional texture. I also find the addition of drizzled oil at service to be unnecessary. It's a very rich and satisfying soup, as well as being quite remarkably green.

Lemon Caper Dressing : page 284

This dressing is a knockout! It's a minimal amount of oil compared to the amount of mustard, lots of lemon supremes, some chopped capers and shallots. There's just a bit of salt and a touch of sugar. It emulsifies instantly (it is a lot of mustard). I admit I ended up using seedy mustard (all those mustards in the fridge and no plain dijon!) but otherwise made as written, though I did halve it. I used it on a simple salad of greens (arugula, spinach, radicchio) and chickpeas and loved it. The half recipe was ample for two big salads and a bit left over.
