Not strictly a souffle since the eggs are not separated. More like a quiche without the crust. Cooking time is over 1 hour so save this one for Sunday brunch.

Easy Tzatziki Sauce : page 93

I made this with plain yogurt instead of sour cream and used it to top a turkey burger. Very yummy.

Hot Ham and Cheese Egg Rolls : page 34

Simple to make -- the hardest part was rolling the omelet. Also fast, so this could be a weekday breakfast. The recipe is adaptable. I used prosciutto, but even vegetables could be substituted for the ham. Not a large portion, but satisfying enough for an everyday breakfast.

Update: Made this again, and my husband asked for it to be placed into rotation. My only complaint is that it's a hard recipe to scale up -- I guess you have to make 2 or more omelets -- and it's not enough for even a light dinner.

Another good variation of baked eggs in a muffin tin. This one incorporates sausage, cheese and lots of veggies.

Uncle Al's Sausage and Peppers Casserole : page 129

You will certainly get your veggies in with this dish. I thought it was a good base recipe, but needs some tweaking. The green beans don't really work; I'd substitute zucchini or eggplant. Also, I'd add the parmesan during the last 10 minutes of cooking so it can brown and melt.
