Ragout of Green Soybeans with Rosemary and Thyme : page 140

Another variation on the edamame braise, this version tastes particularly good after cooling a couple of hours in the cooking liquid. I like to serve as an appetizer with fresh bread and a flavorful cheese.

Slow-Roasted Tomato Sauce : page 96

This is a simple tomato sauce, made exactly like any other tomato sauce with all the possible permutations, except substituting the slow-roasted tomatoes for canned. It was very thick and intense-tasting, a nice change of pace and a good application for cherry tomatoes.

Slow-roasted Tomatoes : page 95

This is a very useful method for preserving a surplus of roma tomatoes. The tomatoes smelled fantastic as they were roasting and tasted great straight out of the oven. They would be wonderful with a little soft cheese and crostini. I froze the remainder to use as I need them.
