Easy Cheesy Chili Chicken from Eating Stella Style: Low-Carb Recipes for Healthy Living

My husband enjoyed this a lot. It was easy enough for a weeknight, but I will have to tweak the seasonings some, as it was just a bit too salty for my tastes. read more >

Eggnog French Toast : page 42

A super-simple way to use up leftover egg nog, and it makes a very rich, sweet French toast to boot. Everyone enjoyed it for New Year's Eve breakfast.

Granola : page 44

First, the good. I like this method of toasting granola at a low heat. The granola came out crunchy and browned, not at all bitter. The brown sugar may have helped.

However, I think this recipe has a bit too much sugar (brown sugar + maple syrup) and fat. I omitted the melted butter to no ill effect. Also, it's a tad too salty for my tastes.

All in all, a decent recipe that just requires some tweaking.
