A no-fail recipe. I use my immersion blender with the whisk attachment, and the result is a perfect homemade mayonnaise every time.

Severely Hot (or Not) Sauce : page 18

This tasted really good right away. I think it will be even better after it mellows a bit. A nice way to use up excess late summer chilies.

Update: I have been using this all winter to add flavor to tacos, sauces and soups. This is great to have on hand when peppers are not in season. I can see myself making a batch every year. Very useful recipe!

Super-fast Thai Cucumber Salad : page 37

I'm not sure what makes this "Thai," other than the rice vinegar, but this is a tasty and handy recipe. I have substituted apple cider vinegar successfully. This method also works with other veggies, such as zucchini.

Watermelon Pops : page 112

These were good. I didn't have the extracts listed, so I tried lemon extract and it added just a hint of welcome citrus. I will have to look for the mint and orange extracts. I made too much puree to freeze and found that it also makes a refreshing drink.
