African Peanut Butter Stew : page 116

Surprisingly good, with a rich, creamy, subtly peanutty taste. The rice was overcooked, so next time I might use brown rice instead. Also less cayenne.

Citrus-Ginger Chicken with Root Vegetables : page 132

This had a nice flavor, especially the glaze on the root vegetables. I left out the broccoli, as I didn't want it to get overcooked, and served it steamed on the side. I also browned the chicken (skin on) first in the dutch oven before adding the remaining ingredients.

Glorious Macaroni and Cheese : page 176

This was the first recipe I tried from this book. Like most mac and cheese recipes, it tastes very good. My husband liked it a lot and thought it resembled mac and cheese pizza (I used a combo of mozzarella and cheddar cheese). I wish it had been a little creamier (there is no milk or cream in this recipe). Next time, I would use less garlic as well. I did like that it has lots of vegetables in it, making it seem healthier.
