This is a pretty basic guacamole recipe, but when it comes to guacamole, simple is best. Let the flavors shine through. This is my go-to recipe whenever I want to make guacamole, which is often. A favorite.

Melted Cheese with Roasted Peppers and Chorizo : page 82

I could not stop eating this, that's how yummy it was. I added some tomatoes and scallions in addition to the chiles and chorizo. The cheese did not stay melted very long, unfortunately, so I think this dish would actually work better as baked nachos, covering the chips with the cheese and vegetable mixture before baking.

Northern-Style Shredded Beef with Tomatoes : page 131

A tasty and easy filling for soft tacos. I substituted shredded chicken for the beef, as called for in the variation, and didn't cook it as long. Served on a soft taco with shredded cheese and romaine lettuce. This recipe is suitable for weeknight cooking.

Red Wine Cooler : page 322

This sangria is too yummy--I ended up drinking way too much. It works well with cheaper wine. I recommend adding a mixture of citrus fruit juices.
