The flavor of the meat was very good and cooking times and instructions were spot on. My only problem with the dish was that, to me, the tri-tip was a bit tough for this cooking method. I might make this again substituting another cut.

I made this dip using full-fat sour cream and mayo. It was fantastic. Having so many different flavors going into it, one might think the dip would taste muddled or that there would be a clash, but it’s beautifully balanced and bright. It’s also not too thick to use as a salad dressing. A real winner!

This flavor combination is sublime! Speck is quite smoky, and that smokiness along with the sweet/tart flavors from the fruit, mellowed by a touch of cream... this is just unbelievably good. And it was even better as leftovers the next day.

This was so good. I sauteed the squash and onions (in a little bit of butter) before adding them to the egg and cream mixture. The final product had this rich, creamy sweetness, with a savory element provided by the cheese and onion. We couldn’t get enough of this, and I plan to make it again.

These ribs lived up to their name. Baking them slowly with beer and finishing on the grill was so easy and just worked perfectly.

The sauce makes a great basting sauce. It is clearly intended to carmelize on the grill to fully develop its flavors. It's not really the kind of sauce you would serve on the side, but cooked on ribs it was delicious. The recipe makes a lot!

Being a no-bake recipe, this tart comes together quickly and doesn’t heat up the kitchen. It is a great way to highlight fresh, ripe strawberries. The mascarpone filling is not too sweet, and not at all heavy. Instead, it lets the strawberries be the stars of the show, complementing them beautifully.

The pork and peaches are delicious together. In the future when I make this I will decrease the brining time somewhat, the pork came out quite salty.
