Vanilla Rice Porridge : page 42

Works either as a breakfast or a dessert (hot or cold). As the recipe states, it takes about 25-30 minutes to completely cook the rice in the hot milk, and it needs almost constant stirring for the last 5 minutes. The porridge will continue to thicken on standing. Prior to serving I like to add a little sweetened vanilla syrup (the type used to flavour coffees) and (if I have used skim milk for the base recipe) a teaspoon or two of cream.
