Camp biscuits that are crunchy outside and tender inside - I didn't believe it could be done!

The secret seems to be including club soda as the liquid. Its a simple recipe -- using bisquick, and even an egg - and they taste great.

Next camping trip I hope to figure out how to make a whole grain home-made bisquick replacement. But it probably won't improve on the final product.

Chili Verde : page 41

Very good! This dish is a bit more involved than most in this cookbook - lots of vegetables to chop, meat to cube, brown separately, etc. But the final result is worth it.

A few notes:
The recipe calls for canned tomatillos. These are hard to find - we substituted fresh (which I cooked separately), and that worked well.
Also - the recipe says it serves 20, but our group of 12 was left a bit hungry. We did have several teenage boys, but still, serving 20 is optimistic.

Don't forget the salt and tortillas.

Easy Pineapple Upside-Down Cake : page 49

Beautiful, tasty, and perfect for a cold night camping.

This simple recipe uses a lot of butter, but it does flip out onto a place perfectly (we've made it twice).

Highly recommended.

Lazy Cobbler : page 52

Simple and satisfying.

This recipe calls for canned peaches, topped with a yellow cake mix (dry), and butter, and a sprinkle of cinnamon. I modified it by using fresh rhubarb, which I cooked separately to make into a rather thick semi-cooked rhubarb compote (sweetened). I placed this in the bottom of the dutch oven, and also added about 1 T tapioca (instant) to be sure it would thicken up.

In spite of my low expectations, this came out with a wonderful crunchy top, and the thick rhubarb layer had moistened the cake mix so it was very tasty. Even those who dislike rhubarb loved it.

The recipe says served 8, but we managed to serve reasonable sized portions to 12. I think it was enough because I used a lot of fruit - 4 inches maybe in the bottom of the dutch oven. The instructions - briquettes on top (10) and underneath allowed it to be perfectly cooked in the specified 45 minutes.

It begged for vanilla ice cream, but was fine au natural.

Southwestern Cowboy Omelet : page 34

A single huge omelet is produced - with about 2 inches of bacon/onion/cheese filling! For us, this served 7 people. Too heavy for me, but tasty.
