Delicious spelt muffins that are easy to make. You do have to follow the directions very carefully in this entire cookbook, but these are so good it's worth it. Perfect to eat all week for breakfast!

Quick and fresh tacos that were perfect for a weeknight dinner. Not a fancy or complicated recipe, but a simple take on at-home tacos. Loved the flavor the pickled onions added.

This recipe is in Cooking Light's "20-minute cooking" section, and this time it was true. It came together simply and was a very satisfying and delicious dish. The mushrooms not only add wonderful flavor but bulked up the dish, and the hazelnuts created a really great layer of flavor. I would definitely make this again!

Perfect cupcakes to make for a "wow" dessert! They were not too complicated to make, and were real crowd pleasers. They look beautiful, and are delicious! My only complaint is that each of the components (cake, filling, frosting) have very distinct and strong flavors, which could be overwhelming at times. Would probably make again!

I never know if I'm going to like a recipe with ground turkey, but this recipe was DELICIOUS! I cannot wait to make these burgers again - they were moist and wonderful, and the cheese in the middle makes them a little bit decadent.

This is a perfect recipe for a simple dinner or lunch for 1-2 people. Easy to make out of ingredients I usually have in my kitchen. Very quick, too. The wilted greens add a really nice flavor and texture.

This recipe has become a staple in our household. It's simple and delicious, and I usually have the ingredients on hand in the freezer/pantry. I love the tart-sweet flavors of a vinegar sauce, and that's so true in this recipe.

This was my first scallop recipe, and I am in love! As long as you like brussels sprouts and bacon, this recipe is a winner. The brussels sprouts turned into a kind of hash that was just divine with the sweetness of the scallops. I definitely plan to make this again!

This fried rice recipe has become a go-to in our house for quick and simple dinners. I love the sauce, the flavors are perfectly balanced. I adapt the protein based on what I have on hand, sometimes using pancetta or tofu instead of the crab in the recipe.
