These are to die for! I've never had anything like the cream that Vij's invented for these lamb popsicles (except at the restaurant where you might have to wait a few hours in line to order). I've heard others say the cream splits, but I find if you keep the simmer very low it stays beautifully emulsified. If you want to wow a dinner guest, this is the dish that will do it.
