These are delicious cookies. Not sure what the hot water and baking soda do for the cookies as they taste similar to many other peanut butter cookies with flour in them. I'm always up for trying a new PB cookie recipe and this young lady certainly did a great job with this one. While my family enjoyed them they didn't let it stop them in reminding me that even though they would eat these anytime they still prefer the ones my daughter makes with only three ingredients, sugar, egg, and peanut butter. I still say these are worth a go if you enjoy peanut butter cookies. I made a half recipe since this one easily halved and I didn't want 5 dozen. I ended up with 21 cookies using a 3/4 ounce cookie scoop for measuring. I suppose mine were a bit larger than the authors but it took only an additional 2 minutes to get them to the browned edges stage.

I find baking soda adds a nice orange color. I would be sure interested in your daughter's recipe for 3 ingredient peanut butter cookies!

Peckish Sister, it's very easy just one cup PB, one cup sugar (sometimes she uses brown sometimes regular) and an egg. Sometimes she adds a tsp of vanilla but it's good either way. Her husband, her and I like a little sprinkle of big flaked salt on top and my hubby and son like some turbano sugar on top of theirs. She bakes at 375 for 8 to 12 minutes.

Thank you, that will be great for the gluten-free!
