Good with slow-cooked lamb. Adapted from a recipe using farro, which as Stephanie says is hard to get (and, I might add, ridiculously expensive when you do find it).

Easier to make than regular cauliflower cheese, if you've got the soft blue cheese. Quite rich, it does as a lunch dish on its own. Yummie, yummie!
