Just needed a good recipe for cornmeal pancakes, since I don't like the texture of standard American buttermilk pancakes. These had just the right subtle grainy texture from cornmeal that I wanted. I did not incorporate the orange slice as suggested.

This issue of ReadyMade Magazine has a whole section on pancake making which includes several interesting variations. Among them are: buckwheat pancakes, vegan orange cornmeal pancakes, potato pancakes with cheddar and chiles, and oven-puffed plum pancake.
