The five star rating applies to both the fresh flavor and fast prep. I used the lump crab meat available from Costco and it was excellent. Added to some 1/4 in. diced celery. Then mix about 1.5 T. fresh lemon juice and a pinch or two of cayenne to one cup of prepared or homemade mayonnaise (I used Hellman's because I was short on time but next time I will definitely try this with homemade mayo). Then fold the crab and celery into the mayo and serve on a roll. I used po' boy rolls (toasted) from Whole Foods and these worked really well. Side salad with a vinaigrette on the tart side and you have a meal. Paired with a NZ white and what a nice way to celebrate spring.
