One of my favourite tarts in the book: fresh strawberries nestled in a sweet-tart rhubarb filling with a buttery pastry crust.
It’s one of the less labour intensive recipes in the book – only this crust and the cooked rhubarb compote need to be made, the rest is assembly.
A wonderful ending to a spring meal.

Wow, that's beautiful! It must have been at least some work to assemble all those strawberries! Looks really great, I hope it was just as delicious!

Thank you....
The berries were ripe and sweet so the tart was very good - I wouldn't recommend making it with substandard fruit. Assembly is actually quite quick if you spend a little time sorting the slices according to size first.
