The German Kitchen
Possibly one of the best English-language German cookbooks. No fancy pictures, no picturesque travelogues -- just a few woodcuts and a lot of good solid German regional cooking. Includes initial food-oriented background material (using a lighthearted, familiar / humorous touch) with details on each region, and then a cross-section of recipes from the regions arranged under master "type" headings: fish, poultry, vegetables, etc. A big useful dumpling section.
It's a pity there isn't a newer edition: you'll have to hunt it down on Abebooks or somewhere similar.
