Berry Cream Muffins : page 308

I bought a bag of frozen mixed berries to use for this recipe. The muffins were just okay... I have never made them again.

They just did not seem very moist and the berries just didn't turn out the way I was hoping. Sadly, but seriously, I prefer the cheap muffin mix you can buy at the grocery store.

Cherry Chocolate Marble Cake : page 143

I love the texture of this cake, so much that I am considering it for my wedding cake. It also has a nice presentation; when you slice into it there is a beautiful marbled pattern as expected!

Changes: I used vanilla extract rather than almond (personal preference). Cooked for just under 1 hour and it was too long.

I think that there needs to either be more cherries or they need to be chopped into eighths.

Chocolate Chip Cookie Bars : page 82

I made this exactly as printed in the book. They are actually very good. I think I like them so much because they stay thick where-as some cookie recipes tend to spread out and get thin.

Note: They are better after they sit overnight. I tried rolling up the dough and freezing it for baking later. I cut the roll into disk-shaped cookies and baked...I wouldn't recommend this - they were tough and spread out too much.

IMPORTANT.... the recipe makes 8 dozen so alter the amount when needed :)

Heavenly White Chocolate Cake : page 121

The first time I made this recipe I followed ingredients as listed. I had a very difficult time trying to figure out how to make the chocolate curls, but otherwise it was a total success.

Note: I prefer to leave out the pecans.

The second time I decided that I would try filling the cake with raspberry puree. On the bottom layer I piped a "wall" of icing around the top edge of the cake and then slowly poured on the raspberry. I topped it with the second layer and did the same process. I was careful not to put too much filling because otherwise it would seep out and turn the white frosting pink!

My fiance specifically requests this cake for his birthday, and everyone (more than 20 people now) have tried this and said it was the best cake they have ever had and you can really tell it is homemade (in a good way).

CUPCAKES! I have made cupcakes using the exact same recipe. bake at the same oven temperature but it only takes about 12 minutes until they are done.

The only photo I have is of the cake that is not filled and that time I didn't use white chocolate.

Marbled Chocolate Cheesecake Bars : page 76

I wrote "really yummie!" in my book...haha

Substitutions: when I can find them I use Hershy's dark chocolate raspberry creme filled chips in the cream cheese mixture instead of 1 cup of semi-sweet chocolate chips.

Note: Spoon the cream cheese mixture in small amounts over the bottom layer. if you don't the cream cheese weighs down the lower layer creating "craters" ... thus these have the nic-name of Crater brownies in my house.

Review: These are very good and a fresh twist on regular brownies.

Raspberry Cheese Coffee Cake : page 304

Substitutions: I used vanilla extract rather than almond (personal preference). Instead of buying raspberry jam I use Torani Raspberry Puree.

Note: Do not let the raspberry seep through to the outside of the pan. If it does it will burn and taste awful!

I have taken this to birthday and Christmas parties and everyone raves about how good this is. It is much better after chilling.
