About me: Almost vegetarian (I eat some fish and seafood, and all cheeses). Not a great cook but I like to eat, so I give it a go. I'm a big fan of simple, nutritionally balanced dishes with a lot of flavour, and I often come up with my own variations after trying any number of recipes. I'm not a fan of dinner parties and I don't tend to make anything special for guests unless they have food allergies or pet hates and can't eat what's cooking - home for me is somewhere to hang out rather than 'entertain'.

All the Reds Soup : page 1

I prefer to roughly blend, although the recipe doesn't state this. This is more or less a vegetarian chilli-con-carne soup recipe.

Baked Avocadoes : page 1

Oven-baked avocadoes stuffed with tomato sauce and topped with cheese. Never knew you could cook avocadoes like this but it really works, they are gorgeous. I freeze small portions of my own tomato sauce so I always have some available when making this, and I use Parmesan or similar hard cheese - cheddar is too greasy and slides off while cooking.

NB - gave this book away recently and can't remember the exact title of the recipe.
