Beautiful Broccoli : page 107
This would be lifted a bit with sunflower or olive oil instead of butter but it still tasted like it was missing the blue cheese instead of being a light, summer broccoli soup. It needs something else, maybe peas or herbs.

Broad Bean, Feta Cheese & Smoked Salmon : page 102
Not a combination I would have thought of but it really works. Great version of pea and ham soup for those who don't eat meat or pork, and the salmon can be left out for vegetarians.
I use olive oil instead of butter to keep it lighter. Tinned broad beans are just as good as fresh. The soup can be stored in the fridge and re-heated, but leave the salmon out and stir in when serving.

Carrot & Ginger : page 51
This is okay. So is regular carrot and coriander soup. Add coriander to this recipe for something special.

This is the best cauliflower cheese recipe I've come across, never thought it'd be a recipe for soup. Very very simple to make, it's become a family favourite.

Okay but nothing special, and not worth the effort. Wouldn't make it again and would recommend using tinned artichoke hearts for those wanting to give it a go.

Mussel, White Wine & Garlic : page 21
You can't go wrong with mussels in white wine and garlic with a bit of cream, so as a soup with a hint of chilli it's both simple and gorgeous.

Sweet Potato & Red Pepper Chowder : page 32
Lovely and warming, and quite attractive, although I prefer the red pepper diced and not sliced, which looks better with the sweetcorn and sliced spring onion. Recipe doesn't specify size or amount of sweet potato but having made this you'll want a thick soup rather than a puree before you add the cream and other vegetables. Add water if the sweet potato is too thick.

Tomato, Fennel & Feta : page 23
This wasn't to my taste at all - way too tart. Maybe it would be less so with the feta blended in or with more sugar added, but I didn't like it enough to try.
