Sky High: Irresistible Triple-Layer Cakes

Another winner! The cake is almost like a fruit cake, but it's received so much better. It was rich, not overpowering with the whiskey, and made a great birthday cake. I especially liked the glaze.

This cake should win awards. Actually, it has. The recipe is legendary at my office and I suggested a friend make it for her office bake-off. She won!

It's got an excellent crumb and the flavor is sweet potato-y, but not overwhelmingly so. It helps to plan ahead a bit so you have a baked sweet potato on hand to make this.
