No-Fuss Moroccan Chicken : page 80
This is really a NO-FUSS recipe. I don't usually use jars of prepared food, but this works for me! It can be made in large quantities and always impresses people! Depending on the age/ preferences you can use mild, medium or hot salsa. If the chicken breasts are large I find they are more flavourful if sliced.
Added bonus: freezes well!

Roasted Squash Soup with Apple and Brie : page 114
This soup freezes well. Good for a dinner party or for family. Brie adds to the flavour, richness and presentation but can easily be omitted if wished.

Spicy Orange Chicken Stir-Fry : page 25
Good recipe for family meal, so don't have to cut everything into uniform sizes! Increasing the amount of zucchini, and adding other vegetables, will improve it for a regular meal. I felt that the spicy orange sauce was lacking and it improved by increasing the amount of orange juice and chili sauce.
Certainly worth repeating.
