Great favourite with the family and it freezes well. Make some without the mindless meat sauce for those who don't like meat... but increase the cheddar sauce and it works well.

A well tested family favourite! A smoked ham hock gives good flavour with lots of meat to return to the soup. I increase the amount of celery and potatoes to 1 cup each and add 2 finely chopped carrots. The soup freezes well in portions and is a great lunch soup in the winter.
