This recipe was excellent. Very easy, inexpensive and filling. Although classified as a side, I served it as a main. It reminded me of an Indian version of Chinese fried rice, in a very good way! I substituted swiss chard for the kale, because I had a ton of it in my garden. This recipe is versatile enough that you could probably substitute any substantial-tasting greens for the kale.
