This recipe starts with cubed pork that you freeze a bit then process in batches in your food processor. I had some lean ground pork in my freezer so I decided to use that. I made a half recipe since that's the amount of pork I had and I had just enough maple syrup left in my bottle to make half as well. Gail suggests you mix this up then let set in the fridge overnight and up to three days. I only had time to let mine sit for about 30 minutes. The sausage was good but would be even better to let the sage, nutmeg, and other ingredients soak in a little to give it a more pronounced flavor. I'll be making this one again. A half recipe made 8 small patties.
