Usually if one of us doesn't care for a recipe I don't give it a five. Since three of us loved these and the only complaint was from hubby who said they'd be great without the carrots, then this one got the five. For heavens sake they're carrot cake pancakes. Great niece picked these out for us to make for breakfast on the last day she stayed with us before her school starts and I possibly get to go back to work soon. Her, son and I thought they were great, but then the three of us love carrot cake.

Instead of pancake syrup these little beauties have cream cheese icing on them. What can I say Joy's a genius. I did omit the small amount of ground ginger since so doesn't care for ginger. I got 12 small pancakes which was perfect for the four of us.
