My boyfriend and I loved this dish. It was easy to make and didn't require ingredients that we had to run around the city for. We served this with crusty whole grain bread. I will definitely make this again.

Excellent! I love eggplant and want to cook more from this cookbook but as you mention, many of the recipes require special ingredients. I'm happy to hear this was a five star dish.
