This is my go-to North Indian cookbook. The recipes are consistently reliable and not dumbed down, though I do tend to increase the spiciness level and decrease the amount of oil. A good primer on the basic recipes of North Indian cuisine. Great selection of different vegetable dishes and the recipes themselves are not overly complicated. I also like how the author has a few introductory sentences in the beginning of each recipe.
