Slow-Roasted Tomatoes from One Good Dish

A dish that could not be simpler to make, and absolutely delicious. Topped the cooled tomato with a room temperature slice of mozzarella drizzled with EVOO and some ribbons of basil. A real treat. read more >

Meyer Lemon Pudding

Thanks to Costco I currently have something of a glut of Meyer Lemons and came across this recipe when looking for ways to use them.

It's a very straightforward pudding prep. Easy and ready to eat in about three hours.

Note: I was able to get the 1/2 cup of Meyer lemon juice called for by the recipe from just two lemons. However, I would have had to zest at least 2-3 more of them to get the 2 T. of zest required. Since I didn't want to do that, I followed what I think was a good suggestion by "the galley gourmet" to mix the lemon zest with orange zest, although I did not mix lemon and orange juice.

This was really delicious and made me wish I'd had some blackberries and a little whipped cream to top the pudding.
