Slow-Roasted Tomatoes from One Good Dish

A dish that could not be simpler to make, and absolutely delicious. Topped the cooled tomato with a room temperature slice of mozzarella drizzled with EVOO and some ribbons of basil. A real treat. read more >

I wanted to like this more than I did. Somehow the flavors never really came together in a harmonious way for me. As with almost every recipe in this book, it comes together very quickly.

Chicken Stock : page 28

I had planned to make chicken stock today using my usual Alice Waters recipe but ran across this recipe when I pulled out this cookbook to look something up after it was mentioned on another foodie website.

It is a straightforward recipe similar to many others -- although this is the first stock recipe I have seen that called for ground pepper rather than whole peppercorns.

Pump suggests an interesting variation which I decided to try-- adding a few chunks of ginger while the stock simmers and a couple of teaspoons of soy sauce at the end of the cooking process. I think this might be very nice to use for an Asian chicken soup.

Simmering away now -- will update on flavor later.

This is a really nice light soup with well-balanced flavor -- hints of ginger and lime rather than strong notes of either. More of an appetizer soup than a main-dish.

Recipe makes enough for about 8 one-cup servings.

May be served hot or cold. The warm version is very nice; will update on cold once I try it tonight.

Recipe calls for chopped curly parsley which did not sound good to me, I added a dollop of lime-cilantro sour cream which went very nicely. Will try chopped flat-leaf parsley in the chilled version tonight.

The prep takes a little time since you are peeling and chopping two pounds of carrots but it's great for a knife skills work-out.

Sweet Corn and Tomato Salad : page 77

A great summer side dish and easy as pie to make. Recipe calls for cilantro but cilantro-haters could easily substitute basil. Lovely colors from a presentation point of view.

Thai Noodles : page 84

This was delicious and easy to pull together. An easy do-ahead dish as it improves if left at room temperature for an hour or two before serving. Recipe calls for a full teaspoon of red pepper flakes but I found a half teaspoon to be plenty of heat.

Served with a baked salmon dish (coriander-cumin rub; topped with a lime sour cream and chopped cilantro) from Food and Wine magazine. Also a small serving of Ina Garten's sugar snap peas dressed with a small amount of toasted sesame oil and black sesame seeds (also easy to do ahead).

May be a good dinner party menu -- goes well with either Sapporo beer or sake.

All the elements of this dish, the fish, the tartar sauce, and the bread come together perfectly. It really is the taste of summer on a plate.
