Not my favourite recipe from this book - nothing wrong with the combination of leeks, ham and cheese sauce, but cooked leeks are really fiddly to handle (especially when hot) so trying to wrap them in ham was a bit of a pain, and trying to cut them into shorter lengths without the middle layers shooting out was even worse. In future I shall cut them into bite-sized pieces at the outset and add the ham to the sauce.
