I made this because I had a giant bunch of coriander I didn't want to waste. The result looked good and tasted OK but cooking all the coriander with the rice toned down its flavour a bit too much. Next time I shall keep some back to add at the end.

Rainbow Trout Baked with Chilli Cream : page 149
Title is a slight misnomer as the trout isn't baked in the cream - it's baked alone in foil (I steamed mine) and served with the sauce. Sauce is very good (includes green peppers as well as the chilli) and I shall try it with chicken as suggested by the author.
