Easy Chicken & Balsamic Peppers - GF from How To: Simplify

I make this with Quorn, no meat (yick!), and add mushrooms. To make it more filling (and yummy ;)) I also parboil cut up potatoes and put that in as well. Also use veg broth, and no Worcestershire sauce... read more >

3 in 1 Vegetarian Cookbook (Favorite Brand Name 3 Books in 1)

By Editors of Favorite Brand Name Recipes, Editors of Favorite Brand Name Recipes

The recipes are mostly on the simpler side, but I've made a large handful of them and they've all worked out nicely.

Betty Crocker Easy Vegetarian (100 Recipes for the Way You Really Cook)

By Betty Crocker
Wiley Publishing - 2010

To be fair, I will say that the final products I've made have come out tasting fine. HOWEVER. When they say "easy," they mean EASY. They mean everything canned, store-bought, prepackaged, etc and so on. I don't know about anyone else (though given the nature of this site I bet I am far from the only one!! hah) but I know that that is NOT "the way *I* really cook"!! What I end up doing, is making all those other bits & pieces in the ingredients from scratch. Which is fine, but it means each recipe generally requires me to know/find at *least* one other recipe in addition to the one on the page.

Again, the final meals are alright, but this is for your SUPERDUPER BEGINNER cook, and/or your 80hrs/wk worker who has zero time and needs to just dump a bunch of stuff in a pan, or whatever. Anyone with a modicum of experience/time on their hands won't be very happy with the actual recipes included.

Morningstar Farms The Veggie Burger Cookbook

By Norman Kolpas, Norman Kolpas, Jason Budow
Fog City Press - 2009

I only gave this a cursory flip-through in the store, and kind of regret that. It looked a lot better at a glance than it was once I really sat and investigated. But there's some decent ideas in it, and the stuff tastes alright.

Vegetarian

By Nicola Graimes
Barnes & Noble - 2003

Not necessarily for your total beginner, these recipes can have a lot of ingredients/steps. But they taste great! This book houses one of my most favorite meals ever! Also, the beginning of the book has a nice long section on all sorts of details about every food group/type, what their health benefits are, etc. Incredibly informative.

Vegetarian Bible: Fresh from the Garden

By Nicola Graimes, Fiona Biggs, Lorraine Turner
Parragon Inc - 2008

I've only made a couple things from here so far, not totally fabulous but not bad either. Haven't really done enough to give a very solid rating, 4 stars might possibly be in order.

Also, like Vegetarian (another Nicola Graimes book) the beginning has a nice useful section of information on various kinds of food and their health benefits.

Only made a few things, but really enjoyed them. Nice recipes, not simplistic but not overly complex either, good flavors & variation.
