I reduced the sugar in the topping mixture to 1/2 a cup, sprinkled some flaked almonds on top and increased baking time by approx. 10 minutes.

Filling can easily be made with a food processor. Cheesecake takes approximately 70 minutes to bake. Serve cooled, cut into wedges with thick (double) cream.

Vanilla Slice : page 24
A classic Australasian 'mille-feuille' consisting of fresh vanilla cream custard set between two layers of cooked puff pastry. This recipe requires a little more vanilla extract (or perhaps a vanilla bean) if you prefer a more predominant vanilla flavour. Even with store-bought pastry this slice was vastly superior to any commercial vanilla slice I've tried.
