Interesting - a fun experiment - but a very sour pizza!

My husband's birthday coincides with rhubarb season, a great coincident because he loves rhubarb. He also believes "everything is better with pancetta". So how could I resist this recipe?

The diced pancetta is cooked up with diced red onion, apple, and rhubarb. The pizza has just a bit of mozzarella cheese. You are also supposed to put finely chopped walnuts on top, but we were out. The result was beautiful - but very sour, and difficult to taste the pancetta.

If you decide to prepare this, I'd advise chopping the rhubarb into small pieces so its not such a sour hit, and perhaps using a smaller amount of rhubarb.
