This was a really good sandwich. Loaded with flavors from the peppers, eggplant, onion, yellow and zucchini squash. The goat cheese spread gave it a nice touch and the Balsamic Vinaigrette added that extra touch. I made homemade ciabatta bread from Peter Reinhart's Artisan Bread Everyday to serve the sandwich on.
