I'm a little on the fence about this crisp. It uses lemon zest in the topping along with oats, granola, cinnamon, nutmeg and brown rice syrup. I'm not sure I dig the combination of lemon zest and peaches. It tastes a bit funky to me but I'm eating my second bowl as I write this so I guess it's tasty enough.

Also, I like less topping and more peaches/fruit but I find myself thinking this every time I make a crisp so a note for myself next time - make less topping!

I love topping on crisps - buttery rolled oats with brown sugar, maybe nuts, maybe cinnamon. But I always think of it as high calorie (this said as I put a peach cobbler in the oven, and sent my DH out for icecream).

This cookbook sounds like it is trying for low cal - did they do something to make the topping crunchy without adding a lot of butter?

I don't think it was too low cal. The recipe called for 1/3 cup of coconut oil. I think I just didn't like this particular topping. The lemon zest bugged me and normally I LOVE lemon zest in recipes.

Actually when I find a good apple crisp recipe I do enjoy the topping but I find it quite rich so the ration of topping to fruit is important to me. I don't want the topping to overwhelm the yummy tender fruit.

Do you have a favourite apple crisp topping or recipe to share with me? I would love a good one.

As we enter apple season, I will keep this request in mind. There is no one recipe that I truly love, so I guess I'll have to try several (a fun challenge!).

I agree that the ratios are very important, especially in desserts. I've been known to repeatedly add a bit more ice cream, then a bit more cake, (repeat) to try to end with the correct amount of each. Science nerds that we are at my house, we always talk about it as the stoichiometry...
