I decided to divide this recipe by 4 so I could have one egg. It was so good next time I'll just halve it. This is quick and simple. I didn't even use any oil in my small cast iron skillet for the salsa. I don't think it's necessary. I choose the Monterey Jack Cheese but I bet it'll be just as good with Cheddar. I did add a little fresh ground black pepper to the final dish. We like our salsa on the spicy side so this was a little spicy just the way we like it. I like my egg less cooked than hubby so I'll make his separate. This is a simple supper but I had it for my Sunday breakfast. So good for any meal. They suggest 3 minutes covered to poach the egg in the salsa but mine took about 4 minutes to get to my liking. Then another couple minutes off the heat to melt the cheese. I'll be adding this to my breakfast and maybe even supper routine. If you want delicious, quick and easy with ingredients your probably have on hand-- eggs, salsa, cheese and corn tortilla -- this this is one to add to your routine too.
