Ecxcellent onion soup - no beef or chicken broth necessary. 3 types of onions - not the traditional, but fantastic.

It was a revelation for me to make onion soup with water, as I almost never have beef broth around - I dislike the canned varieties, and I rarely make it at home.

I've prepared a few things using water in place of broth - not all are successful! But this one sounds like it was great. I'll have to watch for this cookbook.

I see they have it used online at Amazon, etc. I found a few others in the series at a garage sale 2 years ago, but that was before I left California (where they were published). I've made a few things from this book, and plan to make more, as it seems like a very well researched work with amazing recipes from all over France. The book is divided by region. It is the size of a magazine, which makes it easy to squeeze onto your crowded cookbookshelves.
