These are a fun, unusual appetizer, and despite their appearance are pretty easy to make. The crust is just pastry flour and olive oil. The filling includes tofu, spinach, basil, nutritional yeast and cashews-plus some other odds and ends. The only equipment you need are a food processor and mini-muffin tins. The tins are needed for many recipes in this book.

I was a bit worried about the amount of filling left over after filling the crusts, but they came out fine and were very popular. They looked almost exactly like the picture in the book, which always thrills me. I think mini-quiche might be a better description.
