Vacationing in Monterey, California, and just had to take a trip to Castroville, the world artichoke Capitol. Twelve babies for $1, and we followed this recipe to roast them up. The good thing is that it takes much less work to eat them, and also it's better than the traditional dipping in butter and/or mayo. However you really need to trim them down, and my husband didn't like tossing the tough outer leaves. For me, though, this is now my favorite way to prepare artichokes.
