I substituted strawberries for the blueberries since hubby doesn't enjoy cooked blueberries. Son just ate his pancakes with Maple syrup. These pancakes were super fluffy. I cooked the roasted strawberries a little too long and they were a bit bitter upon first taste but after scooping onto the pancakes and adding a bit of maple syrup they were great. I'll be trying these pancakes again with other fruits. Next time I'll double the fruit though since serving sizes were a bit small. This is hubby's stack of two pancakes. Son and I had three each.
