Delicious cookie! These have a wonderful lemon flavor, with a generous burst of blueberries. I made the chewy version of this lemony cookie (there is also a cake-y version). The texture of mine were slightly less chewy than I would have preferred but that may be because I refrigerated my dough for 30 minutes or so since it was very soft (the author recommends this only for the cake-y version).
To achieve the chew the recipe calls for subbing some of the AP flour for Bread flour, an additional egg yolk and skips the baking powder. These are all methods I have seen and used in other chewy cookie recipes and it certainly works here, however next time I will start with the soft dough just after mixing.
