I cooked this during a Cook the Book with Jenni and Denise on Facebook. So happy I did it was delicious and I also won an autographed copy of this cookbook. The pork was super tender and loaded with flavor. I served it over Jasmine Rice as suggested by the author. She had us pan fry some potatoes to stir into the dish right before serving. My husband compared it to his mom's Spanish Pork Chops and Rice which he adores.
